Appe/Paniyara/Paddu

Appe/Paniyaram/Paddu is a South Indian delicacy that can be prepared in different ways. Whenever I want to make quick breakfast this becomes my goto recipe. It is very easy and quick to prepare and taste delicious. On the top of it its healthy too.

Aunthentic recipe of Appe/Paddu/Paniyaram uses idli/dosa batter. You can use anything for a batter like rawa, oats, whole wheat, besan or any other multigrain flour. This time I am sharing the recipe with idli/dosa batter.

The best part of this dish is that you can add any vegetable you like or don’t like it will turn up tasty. So, its best to add healthy vegetables like lauki/bottle gourd/dudhi which kids usually don’t like but is very healthy. This time I have added onion, carrots and capsicum.

I love South Indian dishes a lot that I can have them daily. So, I usually prepare South Indian breaksfast like idli/dosa/upma/appe atleast once in a week. If you and your family too like South Indian you must try this recipe.

Preparation Time – 5-10 Mins
Cooking Time – 10 – 15 Mins

Ingredients –
• Idli/Dosa batter – 2 Cups
• Oil – 1 – 2 Tbsp
• Green chili finely chopped – 1 No (Optional)
• Onion Finely Chopped
• Capsicum Finely Chopped
• Carrot Finely Chopped
• Grated Ginger – 1 Tsp (Optional)
• Salt to taste
• Coriander finely chopped (Optional)
Note – Total vegetables 1 Cup in any ratio.

Method –
• Take two cups of Idli/Dosa batter in a bowl.
• Add finely chopped vegetables of your choice (onion, tomato, capsicum, coriander, green chili)
• Add salt. Mix well.
• In a greased (with oil) appe pan pour the mixture on a low medium flame.
• Cover and cook on a medium low flame for about 5-7 minutes, checking in between.
• Turn appe once done from one side.
• Add little oil. Cover and cook for next 5-7 minutes. Keep checking in between.
• Transfer to a serving plate when done.
• Serve hot with ketchup, chutney or dip of your choice.

Tips and Tricks –
• Keep the consistency of batter neither too thick nor too thin.
• After making vegetable make appe instantly, else vegetables might leave water making batter thin.
• If batter is not fermented nicely add little eno just before making.
• Keep checking in between the appe in center of the pan cooks after than others.
