Description –

Bhutte ka kees is a popular street food from Indore. Corn is mixed with spices, slowly simmered in milk makes it delicious and one of its kind dishes. Its full of flavours and tastes very different from other recipes of corn.

Preparation Time – 10 Mins
Cooking Time – 15 – 20 Mins

Ingredients –
• Fresh Corn Cobs – 2 Medium Size (Preferably Sweet corn)
• Oil – 2 Tbsp
• Cumin Seeds – ¼ Tsp
• Mustard Seeds – ¼ Tsp
• Asafetida – pinch or 1/8 Tsp
• Grated ginger – ½ Tsp
• Green chilies finely chopped – 2 Nos
• Milk – ½ Cup
• Lemon Juice – 1 Tsp
• Sugar – 1/2 Tsp
• Salt to taste
• Coriander for garnish (Optional)
• Coconut grated for garnish (Optional)

Method –
• Grind the corns into a coarse paste.
• Heat oil in a heavy bottom pan. Add cumin seeds, mustard seeds, asafetida, grated ginger and finely chopped green chilies. Stir for about half a minute.
• Add grated corn and mix well.
• Cook on a low flame for about 4-5 minutes or until the colour of corn is slightly changed. Keep stirring in between.
• Add milk and mix well. Cover the lid and cook on a low till the milk is evaporated and mixture is thickened. Keep stirring in between to prevent sticking to the bottom of the pan.
• Add salt, lemon juice and sugar and mix well.
• Switch of the flame. Garnish with coriander leaves, grated coconut.
• Serve hot.

Tips & Tricks –
• Use a heavy bottom pan to prevent sticking. Grease the pan beforehand with oil to prevent sticking.
• Sweet corn tastes better; you can also use other corn cob as per taste.
• Adding sugar is optional as per taste.
