Description –
Masala Khichdi is a spiced version of simple khichdi. This is a wholesome meal in itself and a healthy one. It can be cooked easily when step by step recipe is followed. Tempering in ghee makes this dish delicious and relishing.

Preparation Time –
10 Mins
Cooking Time – 25 – 30 Mins

Ingredients –
• Rice – ½ Cup
• Spilt green gram(dal) – ½ Cup
• Ghee – 2 Tbsp
• Bay Leaf (Tej patta) – 1No.
• Cloves (Laung) – 2No.
• Green cardamom (elaichi) – 2No.
• Cumin Seeds (Jeera) – ½ Tsp
• Mustard seeds (Rai) – ½ Tsp
• Turmeric Powder – ½ Tsp
• Red chili powder- ½ Tsp
• Peas – ½ Cup
• Ginger finely chopped- 2 Tsp
• Garlic finely chopped – 2 Tsp (optional)
• Onion chopped – ½ Cup (optional)
• Tomatoes finely chopped – ½ Cup
• Coriander leaves for garnish
• Salt to taste
• Water – 2½ Cups

Method –
• Wash and soak dal and rice for about 30mins.
• Heat 1 Tbsp ghee in a pressure cooker. Add cumin seeds, mustard seeds, chopped ginger, chopped garlic, bay leaf, cardamoms and cloves. Saute till spices leave its aroma.
• Add chopped onion and peas. Cook till onion turns translucent.
• Add chopped tomatoes. Cook for about 2-3 mins. Add salt, turmeric powder and red chili powder. Mix all spices well with the vegetables.
• Add rice and dal. Mix well with all the other ingredients.
• Add water and pressure cook for about 10-15 minutes or 3-4 whistles. Put on high flame till 1 whistle and then lower the flame.
• When steam (pressure) is released on its own remove the lid.
• Garnish with coriander leaves and remaining ghee. Serve hot.

Tips and Tricks –
• Tastes best when cooked in ghee.
• Basmati tukdi (Broken Basmati) gives a best texture and taste to this recipe.
• Vegetables like carrots, capsicum potatoes can be added as per taste.
• Garnish with ghee for better taste.
• Onion and garlic are optional ingredients.
• If you are running short of time reduce the soaking time and cook till 7-8 whistles.
