Lemon Rice is the quickest of recipes that I have come across. I love South Indian food and being a rice person, I feel delighted to see the wide variety of rice preparation that’s been done in South of India. First of all, it’s very quick to make and second of all its good to have so many variants for one ingredient.

Also, these recipes make good use of leftover rice. It’s a quick, easy and healthy dinner recipe.
The flavor of lemon enhances the taste and adds nutritional value to the dish.
I prefer my dinner to be light at home and hence these rice recipes help to do variations in my kitchen. This way neither I get bored of cooking nor eating.

About the dish –

Very famous South Indian rice recipe which requires minimal ingredients to get amazing taste. Curry leaves, chana dal, urad dal, peanuts, chilies and lemon are few major ingredients with makes this dish delicious.

How to Prep –

Keep all the required ingredients ready as it’s a quick recipe and you’ll need everything in hand to get the best results. Most important is to switch off the flame right after adding lemon to the tempering.

What makes it healthy –

As I mentioned earlier, I am totally a rice person and I love to include rice in at least one of my meals in a day. Also, I am very health freak and I follow renowned dietician Rujuta Diwekar. I was happy when I got to know that she recommends dal chawal for dinner. Rice is healthy in many ways. Its light and easy to digest. It is very less in fat and is a good source of manganese, phosphorous, folic acid and iron. Other than rice I also prefer making other rice dishes like Matar Pulao with Spinach, Tomato Rice, Vegetable Rice, Garlice rice, you can pair it with different curd variants like Cucumber Raita, Italina flavoured vegetable Raita

Lemon is rich in vitamin C.
With all these nutritious ingredients makes this dish healthy and delicious.

Instructions
  1. Heat oil in a pan.
  2. Add mustard seeds and allow them to splutter.
  3. Add urad dal and roasted chana dal.
  4. Cook for 2-3 mins on a low flame.
  5. Add curry leaves, whole red chili, roasted peanuts and turmeric powder. Mix well.
  6. Add lime juice. Switch off the flame.
  7. Add boiled rice. Mix well.
  8. Add salt if required. Mix well.
  9. Serve hot

Tips and Tricks –
• Maintaining the required temperature is the key in this recipe.
• Adding lime juice to the tempering directly gives the desired color to the dish.
• Add green chili if you can handle the heat, it tastes good in this recipe.
• Switching off the flame right after adding lime juice is very necessary.
