Tamatar ki sabzi/chutney

Description –

Tamatar ki sabzi is easiest and quickest recipe to be prepared. It is a savory recipe when running out of vegetables and time. Goes well with almost everything like roti, paratha, steamed rice, pulao, dal khichdi and south Indian dishes. You may consider it as sabzi or chutney as goes well with everything and needs small quantity like chutney.

Preparation Time – 5 Mins
Cooking Time – 10 – 15 Mins

Ingredients –
• Tamatar (Tomatoes) finely chopped – 4 large size
• Cumin Seeds – ½ Tsp
• Mustard seeds – ½ Tsp
• Green chili slit in between – 1 No.
• Curry leaves – 4-5 Nos.
• Red chilli powder – 1 Tsp
• Sugar – ¼ Tsp
• Salt to taste
• Oil – 1 Tbsp

Method –
• Heat oil in a pan. Add cumin seeds, mustard seeds, slit green chili and curry leaves and let it splutter.
• Add finely chopped tomatoes and cook for about 5- 6 mins.
• Add red chili powder, salt and sugar and mix well.
• Cook on low flame till tomatoes done.

Tips and Tricks –

• Adding sugar is optional. It is added to balance the acidity of tomatoes.
• Always adjust spices as per your taste.
• Add more oil to preserve it for longer time.
