Tawa Pulao

Description –
Tawa Pulao is a quintessential street food of Mumbai. Its taste has made it popular all over the country. This variant of rice is tossed with vegetables and pav bhaji masala which gives it a different yet flavorful taste.

Preparation Time – 10 -15 Mins
Cooking Time – 10 – 15 Mins

Ingredients –
• Rice boiled– 2 Cup
• Tomatoes finely chopped – 3 Medium
• Green peas boiled – ¼ Cup
• Green Capsicum finely chopped- 1 Medium
• Carrot diced and boiled – 1 Small
• Cumin seeds – ½ Tsp
• Pav Bhaji Masala – 2 Tsp
• Red chili powder – 1 Tsp
• Salt to taste
• Lemon juice – 1 Tbsp
• Coriander finely chopped for garnish
• Oil- 2 Tbsp

Method –
• Heat oil in a nonstick pan. Add cumin seeds and sauté till brown.
• Add chopped tomatoes and cook till soft.
• Add peas, carrots, red chili powder, pav bhaji masala and salt. Mix well.
• Add capsicum and cook for 2-3 minutes. Make sure capsicum remain crisp.
• Add rice and lemon juice, mix well. Cook for about 2-3 mins.
• Garnish with coriander. Serve hot.

Tips and Tricks –
• Basmati long grain rice goes well for this recipe.
• Adjust spices as per taste.
• Best way to use leftover rice.
• Uncooked peas and carrots can also be used and can be directly cooked in pan with tomatoes.
