Description –

Vegetable upma is a healthy breakfast and can be prepared quickly. Upma is a popular South Indian breakfast made with roasted rawa and vegetables. Rava is also called suji or semolina. It can be prepared quickly with available roasted rawa. It is better to pre roast rawa and preserve in air tight container, as it helps in quick preparation and also prevents it is from decaying fast.

Preparation Time – 5-10 Mins
Cooking Time – 15 – 20 Mins
Servings – 3 – 4

Ingredients –
• Roasted Rava – 1 Cup
• Warm Water – 3 Cups
• Oil – 1 Tbsp
• Curry Leaves – 4-5 Nos.
• Green chili finely chopped – 1 No.
• Mustard seeds – 1 Tsp
• Finely Chopped Carrot – 1 No.
• Finely Chopped Capsicum – 1 No.
• Peeled Pea – 2 -3 Tbsp
• Lime Juice – 1 Tsp
• Salt to taste
• Coriander finely chopped to garnish (Optional)

Method –
• Heat oil in a pan. Add mustard seeds and let it splutter.

 

 

 

 

• Add finely chopped green chili and curry leaves. Add peas and cook for 2-3 mins.

 

 

 

 

• Add finely chopped carrots and mix.

 

 

 

 

• Add finely chopped capsicum.

 

 

 

 

• Mix and let it cook for 2-3 mins. Make sure vegetables do not lose crunch.

 

 

 

 

• Add salt and roasted rava. Mix well. Cook for 2-3 minutes on low flame stirring occasionally.

 

 

 

 

• Add warm water and mix well.

 

 

 

 

• Cook till half of water is absorbed. Add lime juice and mix well.

 

 

 

 

• Cook on a medium low flame for 5-6 mins or till water is absorbed completely.

 

 

 

 

• Garnish with coriander leaves.(optional)
• Serve hot.

Tips and Tricks –
• Adjust lime juice and chili flavour as per taste.
• You can also add onion and roasted crushed peanuts.
