Description –

This recipe of zucchini and pepper salad is delicious and flavoursome. The fresh zucchini and peppers are spiced with Italian flavours and topped with cheese. It can be served as a side dish or as starters.

Zucchini & Pepper Salad

Preparation Time –
5 – 10 Mins
Resting Time – 15 Mins
Cooking Time – 2 Mins

Ingredients –
• Zucchini cut into 3 inches longitudinal pieces – 4 Tbsp
• Red bell pepper cut into thin 3 inches longitudinal slices – 4 Tbsp
• Yellow bell pepper cut into thin 3 inches longitudinal slices – 4 Tbsp
• Green bell pepper cut into thin 2 inches longitudinal slices – 4 Tbsp
• Dried oregano powder – 1/2 Tsp
• Dried basil powder – 1/2Tsp
• Paprika powder – 1/4Tsp
• Garlic powder – 1/4Tsp
• Salt to taste
• Olive Oil – 1 Tsp
• Lemon Juice – 1/2Tsp
• Cheddar Cheese – 2 Tbsp (Or any cheese of your choice)

Method –
• In a bowl add zucchini, red bell peppers, yellow bell peppers, green bell peppers, olive oil, salt, oregano, basil, paprika powder, garlic powder and lemon juice.
• Cover and let it rest for 15 mins.
• In a non-stick pan add zucchini and pepper mixture. Saute on a low flame for 2 mins, uncovered. Make sure vegetables do not lose crunch.
• Switch off the flame. Add cheddar and mix. Let it melt with the heat of vegetables.
• Serve salad as starters or side dish.

Origin –
• Summer squashes are believed to be originating in the Central America and Mexico.

• Good source of potassium.
• Rich in Vitamin A and Vitamin C.
• Contain moderate levels of Vitamin – B like thiamin, pyridoxine, riboflavin and minerals like iron, manganese, phosphorus and zinc.
Types of Zucchini –
Golden Zucchini features brilliant golden-yellow skin that retains its colour after cooking.
Tatume, common in Mexico, has similar features of round variety but has the large oval shape.
Yellow crooknecks have thick warty skin with markedly curved neck, crunchy in texture with sweet delicate flavour.

Bell pepper, also known as sweet pepper, is one of the most commonly employed chili peppers in the Capsicum family. Sweet peppers are fruit pods on the capsicum plant grown for their subtle hotness yet sweet, delicate peppery flavor they extend to the recipes.
• Bell peppers have been cultivated for more than 9000 years, with the earliest cultivation having taken place in South and Central America.

• Bell peppers are an excellent source of vitamin A, vitamin C and vitamin B6.
• They are a very good source of folate, molybdenum, vitamin E, dietary fiber, vitamin B2, niacin and potassium.
