Kundru ki Sabji with step by step photo and video recipe.

Kundru also commonly known by different names like Tendli, Ivy Gourd, Kovakka, Tindora and Coccinia.

There are various ways to prepare this sabzi. I learnt this recipe from my Mom. It requires very few ingredients like onion and some easily available spices to prepare it.

The kundru is sliced vertically and cooked with onion till crisp and tender. It goes well with roti/paratha and dal rice to make a perfect and healthy lunch or dinner.

You can also pack kundru ki sabji for kid’s or husband’s lunchbox along with paratha and salad to make a complete meal.

How to Prepare for Kundru ki Sabji –

To prepare for kundru ki sabji at home, wash, clean and chop the tips of kundru. Cut it vertically and set aside. Finely chop garlic and keep ready. Peel and slice onions and keep the required spices ready.

 

How to make Kundru ki Sabji at home –

To make tendli fry, heat oil in a pan. Splutter cumin seeds, add garlic and whole red chilli. Cook for a min. To it, add sliced onions and cook till translucent.

Next, add sliced tendli and cook till half done. Finally, add suggested spices and mix well. Add a splash of water, cover and cook till done.

How to serve Kundru ki Sabji –

Kundru ki Sabji goes well with roti or paratha. I also like to pair it with Gobhi wale Chawal, Carrot Raita and Amla Pickle to make a complete meal.

Things to keep in mind while making kundru ki sabzi at home –

1. Wash and dry tindora (kundru) before cutting and preparing.
2. Adjust spices as per taste.
3. Keep stirring the vegetable in between to prevent it from burning.
4. Add fresh coriander to bring freshness to the sabzi.
5. Adding a dash of water helps to combine all the flavours well.

8. Cover and cook till done. Stir in between so that it doesn’t stick to the bottom of the pan.

9. Finish it with coriander leaves. Mix well.

10. Serve hot with roti or paratha.

  • 1 Tbsp Oil
  • 1 Tsp Cumin Seeds
  • 2 Cloves Garlic
  • 1 No. Whole Red Chilli
  • 1 Large Sliced Onion
  • 1 Tsp Turmeric Powder
  • 1 Tsp Red Chilli Powder
  • 1 Tsp Coriander Powder
  • 1 Tsp Amchur Powder
  • 1/4th Tsp Garam Masala Powder
  • Salt to taste
  • 400 gms Kundru/Tendli
  • Dash of water
  • Coriander Leaves
