While we easily get bored of the same food every day, we make sure to enjoy different raita recipe every day.

Lauki ka Raita is one of my favorite raita recipes and also one of my favorite lauki ki recipe.

When everyone makes faces thinking of lauki, this recipe is a huge hit at home always.

Raita elevates even the simplest of meals to next level. You can serve this lauki raita with vegetable tehri, biryani or pulao.

The best part about raita is, that is comes out it no time and makes for a great side dish.

Raita is refreshing specially in summers but if you use fresh homemade yogurt, it is healthier to enjoy even in winters.

How to prepare for Lauki ka Recipe –

Set homemade curd or use store-bought. We always prefer using freshly prepared homemade curd for making raita at home.

Peel and grate lauki and set aside. Keep other suggested ingredients ready.

 

How to make Lauki ka Raita at home –

To make lauki raita at home, boil or steam grated lauki with some water. Let it cool down.

Whisk curd till smooth. Add in the salt, black salt, grated lauki, roasted cumin powder and fresh coriander leaves.

Things to keep in mind while making Lauki Raita Recipe –

1. Prefer using freshly prepared homemade curd for better health results.
2. Grate and boil lauki with minimum water required. Open the cooker only when steam is released.
3. Make sure to cool down the lauki before adding it to the raita.
4. Whisk curd well till smooth. It should be creamy and smooth.
5. Do not keep raita at the room temperature for longer time else it will turn sour.
6. Adjust the consistency as required. Remember the steamed lauki will have water content too.
7. You can also use green chillies to give a kick to the raita. Make sure to deseed before adding.

 

Step by Step Recipe of Lauki (ghiya) Raita –

Boil/Steam Lauki –

1. Add grated lauki to a pressure cooker along with salt and some water.

2. Cook for one whistle on a high flame.

3. Open the cooker only when steamed is released by itself.

4. Transfer it to a bowl and let it cool.

 

Make Raita –

5. Take curd into a mixing bowl. Whisk nicely till smooth and creamy.

6. To the curd add salt, black salt, roasted cumin powder, coriander leaves and boiled grated lauki.

7. You can also add green chillies to get the kick. Though it is totally optional.

8. Give everything a nice mix.

9. Serve chilled or at room temperature.

Ingredients
  

  • 1 Cup Grated Lauki (Bottlegourd)
  • Salt to taste
  • 2 Tbsp Water
  • 1 Cup Curd
  • Salt to taste
  • Black Salt
  • 1 Tsp Roasted Cumin Powder
  • Coriander Leaves
  • Green Chilli (optional)

Instructions
 

Boil/Steam Lauki –

  • Add grated lauki to a pressure cooker along with salt and some water.
