One of the easiest and quickest paneer recipes that you can prepare at home. This is a restaurant style Paneer bhurji recipe which is juicy and yummy.

During lazy weekends or when I am looking for quick weekday dinner recipe this is the first thing that comes to my mind. My in-laws’ side of the family likes to eat more of roti than rice. So quick one pot rice meals aren’t easy to sell, whereas such quick sabzi recipes always comes to rescue.

 

Paneer Bhurji

 

Paneer bhurji gravy is an onion tomato gravy cooked with grated paneer and some spices. Freshly made homemade paneer is best suited for this sabzi. Also, you do not require to set the paneer for this recipe.

This is a North Indian style curry recipe which is very common and is prepared in every household for breakfast, lunch or dinner. This sabzi makes for a great and quick lunchbox recipe as well.

In some regions it is also served as a breakfast along with pav or bread.

How to prepare for Bhurji Recipe –

 

Make fresh paneer at home or grate store bought paneer. If making homemade paneer, do not throw the whey, we will use it in the recipe.

Finely chop ginger, garlic, green chilli, onion and tomato and set aside.

 

How to make paneer at home?

 

Boil full cream buffalo milk. As soon as it starts to boil, add vinegar or lime juice.

It will start to curdle. When it is curdled, strain the whey and separate the paneer.

Do not overboil after it is separated, else it will turn leathery.

Run cold water over paneer to stop cooking process and remove the flavour of vinegar.

Use this paneer in the sabji.

 

How to make Bhurji at Home –

 

In a pan heat oil. Add in the ginger, garlic and green chilli. Cook for a min.

Next add onion, boiled or frozen peas (optional), cook for a while. Now add in the spices and mix well.

Next add tomato puree, cover and cook till nicely done. Add the whey or water as per the required consistency. Finally add paneer, mix well and finish with coriander and kasuri methi. Serve hot.

Things to keep in mind while making Paneer Bhurji –

 

Try This  Matar Paneer Pulao

1. Make sure the paneer is fresh. If you are using store bought paneer, dip it in warm water for 10-15 mins. and them grate.
2. Do not throw the whey, using it to make the gravy.
3. In case you do not have the whey replace it with the mix of milk and water.
4. Do not overcook after adding paneer else it will turn chewy and leathery.
5. Adjust the consistency and spices as required.
6. Cover the pan after adding tomatoes, it will help in cooking faster. Stir in between.
7. If making paneer at home, do not over boil it. Separate the whey as soon as it is curdled.

 

Step by Step Recipe of Paneer Bhurji Recipe –

 

Make Paneer (if using homemade) –

1. Boil full cream buffalo milk.

2. As soon as it starts to boil, lower the flame and add vinegar or lime juice to help it curdle.

3. Stir in well and switch off the flame as soon it is curdled.

4. Strain the whey and keep it aside.

5. Wash the separated paneer thoroughly with cold water to stop cooking process and remove the smell and taste of vinegar.

6. Set paneer aside.

 

If using store-bought paneer –

 

7. Dip the paneer in luke warm water for 10-15 mins, it will help in softening the paneer.

8. Grate the paneer and set aside.

 

For Gravy –

9. Heat oil and butter in a pan. Add cumin seeds, finely chopped ginger, garlic and green chilli.

 

10. Cook on a low flame for about a min.

12. Mix well and cook for about 3-4 mins. on a low flame.

13. Now add turmeric powder, red chilli powder, salt and garam masala powder.

15. Next add tomato puree. Cover and cook for 4-5 mins or until done. Stir on between.

 

16. Add in the whey or water as per required consistency.

How to serve Paneer Bhurji Gravy –

 

Serve this paneer bhurji sabji with garam ghee loaded roti or phulka to make a quick weekday dinner.
You can also serve it with pav or bread for a breakfast.

If you wish to have an elaborative meal, pair it with salad, tandoori gobhi, veg tehri, carrot raita, tandoori roti.

  • 2 Tsp Oil
  • 1 Tbsp Butter
  • 1 Tsp Cumin Seeds
  • 2 Tsp Finely Chopped Ginger Garlic
  • 1 Tsp Green Chilli
  • 1 Cup Onion
  • 1/4th Cup Peas - 1/4th Cup
  • 1 Tsp Turmeric Powder (haldi powder)
  • 1 Tsp Red Chili Powder (lal mirch powder)
  • 1 Tsp Garam Masala Powder
  • 1 Cup Tomato Puree
  • Whey or Water as required
  • 1 Cup Grated Paneer
  • Coriander leaves
  • 1/4th Tsp Kasuri Methi
