We all struggle with the leftover food in India as we prefer to prepare and eat fresh food every day.

Roti is something that is a staple food in most of the regions in India and we make it every day and in fact two times a day.

Since it is not possible to make the food in the exact quantity that we can finish, we are left with rotis the next day.

I have so many recipes using the leftover rotis, I am sharing the one for which we all love and enjoy at home.

 

Leftover Roti Noodles

 

This makeover makes good use of the leftover rotis or paratha. The leftover rotis are given an Indo Chinese twist.

No one wants to eat the food on repeat and hence giving it such a makeover is always a good idea.

 

Roti noodles makes for a great breakfast or a snack.

I love to be creative in the kitchen and make dishes out of whatever is available in the kitchen. This is the result of one such innovation.

How to prepare Roti Noodles –

Roll the leftover roti, cut using a scissor or knife into thin strips, which gives it a noodle shape.

Julienne cut the required vegetables and keep the sauces ready.

How to make Leftover Roti Noodles –

Heat oil in a pan. Add ginger, garlic and green chilli.

Also add sliced onion, carrots and bell peppers. Give it a good mix and cook on a high flame.

Next add roti (cut into strips), salt, schezwan sauce, red chilli sauce, ketchup, vinegar and soy sauce. Give everything a good mix and cook on a high flame. Keep stirring and cook until one.

 

Things to keep in mind while making Leftover Roti Noodles –

1. Cut rotis or paratha into thin strips giving it a noodle shape.
2. Cook veggies on a high flame and keep tossing making sure they do not burn. Vegetables should not lose the crunch.
3. Add sauces on a low flame so that nothing sticks to the bottom of the pan.
4. This recipe is best prepared in a Chinese wok or any cast iron pan or kadai.
5. Prefer sesame oil for this recipe.

1. Cut leftover rotis into thin strips.Set aside.

3. Cook for a min on a low flame.

5. You can also add vegetables of your choice like capsicum, cabbage, spring onion etc.

7. Give everything a good mix.

  • 3-4 Nos. Leftover Roti
  • 1 Tbsp Oil
  • 1 Tbsp Ginger, Garlic & Green Chilli
  • 1 No. Sliced Onion
  • 1 No. Julienne Carrot
  • 1 Cup Bell Peppers
  • Roti
  • Salt & Pepper
  • 1 Tsp Schezwan Sauce
  • 1 Tsp Red Chilli Sauce
  • 1 Tsp Ketchup
  • 1 Tsp Soya Sauce
  • 1 Tsp Vinegar

Instructions
 

  • Cut leftover roti into strips. Set aside
