Pasta Salad

Pasta salad is creamy and chilled version of pasta with lots of vegetables. It is easy and quick to prepare with easily available ingredients.

Ingredients
  

For Dressing

  • Curd - 2 Tbsp
  • Mayonnaise - 1 Tbsp
  • Virgin Olive Oil - 1 Tsp
  • Lime Juice - 1 Tsp
  • Red Chilli Flakes - 1 Tsp
  • Mixed Herbs - 2 Tsp
  • Salt & Pepper

Other Ingredients

  • Boiled Macaroni Pasta - 1 Cup
  • Finely Chopped Onion - 2 Tbsp
  • Bell Pepper - 2 Tbsp
  • Capsicum - 2 Tbsp
  • Carrot - 2 Tbsp

Instructions
 

Boiling Pasta

  • In a pan add water, once it starts boiling, add salt and stir in.
  • Add pasta of your choice and cook it for the time mentioned on the back of the packet.
  • Make sure to keep it al dente and not overcook it.
  • Strain excess water and pour cold water immediately.
  • Coat lightly with oil if required.
  • Allow pasta to cool before making the salad.

Dressing -

  • In a mixing bowl, add yoghurt, mayonnaise, salt, pepper, red chilli flakes, lime juice and mixed herbs.
  • Mix everything well and set aside.
  • In a large mixing bowl add boiled pasta, finely chopped vegetables and dressing.
  • Mix everything well and serve chilled.

Notes

• Pour cold water over pasta immediately after boiling.
• Do not mix onions if planning to serve later.
• Do not over boil pasta.
• Keep in an airtight container and refrigerate if not serving immediately.
