In a mixing bowl, add maida, whole wheat flour, sooji, salt, sugar, baking powder and baking soda, mix well.
Next add oil and curd and rub the flour in between palms to mix everything well.
Using luke warm water knead a semi soft dough.
Make sure to knead the dough for good 10 mins., to get the perfect soft and smooth texture.
Cover the dough with a damp cloth or lid and let it rest for 30 mins.
Uncover and knead again till soft and smooth.
Frying Bhaturas –
Roll out the dough balls into desired thickness. It should not be too thick or thin.
Check the temperature of oil, drop a tiny piece of dough in the oil, it should rise immediately.
Carefully slide in the bhatura in hot oil and it let it puff up.
Turnover and cook on both sides.
Strain excess oil on a kitchen towel.
In case the bhaturas do not puff up by itself, press gently with the back of a perforated spatula and then turn over.
Serve hot with chole.
