Bhatura Recipe

This is a foolproof Instant Bhatura Recipe. This recipe will make balloon like puffed bhature every single time.

Ingredients
  

  • 3 Cups All Purpose Flour (Maida)
  • 3/4th Cup Whole Wheat Flour (Atta)
  • 1/4th Cup Sooji
  • Salt to taste
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/4th Cup Curd
  • 1/4th Cup Oil
  • 2 Tbsp Sugar
  • 2 Tbsp Oil

Instructions
 

Kneading dough –

  • In a mixing bowl, add maida, whole wheat flour, sooji, salt, sugar, baking powder and baking soda, mix well.
  • Next add oil and curd and rub the flour in between palms to mix everything well.
  • Using luke warm water knead a semi soft dough.
  • Make sure to knead the dough for good 10 mins., to get the perfect soft and smooth texture.
  • Cover the dough with a damp cloth or lid and let it rest for 30 mins.
  • Uncover and knead again till soft and smooth.

Frying Bhaturas –

  • Roll out the dough balls into desired thickness. It should not be too thick or thin.
  • Check the temperature of oil, drop a tiny piece of dough in the oil, it should rise immediately.
  • Carefully slide in the bhatura in hot oil and it let it puff up.
  • Turnover and cook on both sides.
  • Strain excess oil on a kitchen towel.
  • In case the bhaturas do not puff up by itself, press gently with the back of a perforated spatula and then turn over.
  • Serve hot with chole.

Notes

• Make sure to regulate the temperature of oil while frying.
• The dough should be semi soft, it should turn softer while resting.
• The oil should be really hot while frying the bhaturas.
