Lauki Ka Raita
Lauki ka raita makes for a great side dish.
You can serve it with pulao, biryani, masala khichdi, jeera rice or along with roti, sabzi, dal chawal to make a complete meal.

- 1 Cup Grated Lauki (Bottlegourd)
- Salt to taste
- 2 Tbsp Water
- 1 Cup Curd
- Salt to taste
- Black Salt
- 1 Tsp Roasted Cumin Powder
- Coriander Leaves
- Green Chilli (optional)
Boil/Steam Lauki –
Add grated lauki to a pressure cooker along with salt and some water.
Cook for one whistle on ahigh flame.
Open the cooker only when steamed is released by itself.
Transfer it to a bowl and let it cool.
Make Raita –
Take curd into a mixing bowl. Whisk nicely till smooth and creamy.
To the curd add salt, black salt, roasted cumin powder, coriander leaves and boiled grated lauki.
You can also add green chillies to add the kick. Though it is totally optional.
Give everything a nice mix.
Serve chilled or at room temperature.

• Adjust the consistency and spice level as per taste.
