Lauki Ka Raita

Lauki ka raita makes for a great side dish. You can serve it with pulao, biryani, masala khichdi, jeera rice or along with roti, sabzi, dal chawal to make a complete meal.

Ingredients
  

  • 1 Cup Grated Lauki (Bottlegourd)
  • Salt to taste
  • 2 Tbsp Water
  • 1 Cup Curd
  • Salt to taste
  • Black Salt
  • 1 Tsp Roasted Cumin Powder
  • Coriander Leaves
  • Green Chilli (optional)

Instructions
 

Boil/Steam Lauki –

  • Add grated lauki to a pressure cooker along with salt and some water.
  • Cook for one whistle on ahigh flame.
  • Open the cooker only when steamed is released by itself.
  • Transfer it to a bowl and let it cool.

Make Raita –

  • Take curd into a mixing bowl. Whisk nicely till smooth and creamy.
  • To the curd add salt, black salt, roasted cumin powder, coriander leaves and boiled grated lauki.
  • You can also add green chillies to add the kick. Though it is totally optional.
  • Give everything a nice mix.
  • Serve chilled or at room temperature.
