Since its monsoon we all love to enjoy pakoras. What’s the first thing that comes to your mind when it starts raining? For me it’s always pakodas. As we also call it ‘aj to pakode wala Mausam ho raha hai’ (its pakoda kinda weather today).

This bread pakora is a family favorite. Though it requires a little extra effort than the plain bread pakoda but it’s worth the time and efforts.

The spicy potato mixture is stuffed between breads along with spicy chutney and ketchup, dipped in gram flour batter and deep fried.

How to prepare for Bread Pakora Recipe –

Boil potatoes and let them cool. Keep all the suggested spices and other ingredients ready.

Prepare mint coriander chutney in advance.

How to make Bread Pakora at home –

Make batter by mixing besan, rice flour, salt, turmeric, carom seeds, hing and required water.

Prepare the potato stuffing by heating oil, add in ginger, garlic, green chilli and crushed coriander seeds. Next add coriander leaves and spices. Let them cook, add boiled and grated potatoes. Give everything mix and let it cool.

Apply mint coriander chutney on one bread and ketchup on another. Stuff potato filling and cut into two halves making triangle shape. Dip the bread sandwich in batter and deep fry in hot oil on a medium flame until golden brown.

Things to remember while making Bread Pakora –

1. Make sure the potato stuffing is cooled down before using, else it will make the bread soggy.
2. The batter should neither be too thick nor thin. Drop the batter from height and it should not form ribbon on the surface. It should be mixed with the batter.
3. Maintain the temperature of oil through out. Too cold will result in oily pakoras and too hot will lead to under cooked pakoras.
4. Deep fry pakoras right after stuffing the filling else it will get soggy. The chutney and ketchup will make it soggy.
5. Make sure to drip all the excess batter before putting the pakoras in oil to deep fry.
6. Do not flip the pakoras a lot, let it cook well from one side and then only flip and cook on another side.

Step by Step Method to make Bread Pakora at Home –

 

Make Batter –

1. In a large mixing bowl, add besan, rice flour, salt, turmeric powder, ajwain, hing and give it a mix.

2. Adding water in small quantity make batter.

3. Let it rest.

4. In a wok heat oil. Add ginger, garlic and green chilli.

5. Next add crushed coriander seeds, turmeric powder, red chilli powder, coriander powder, amchur powder, salt and coriander leaves. Give everything a nice mix.

 

6. Make sure the spices do not burn.

7. Add grated boiled potatoes and mix everything well.

 

8. Let it cool down.

Frying Pakoras –

 

12. Heat enough oil in a kadai to deep fry the pakodas.

 

13. Right before frying add 2 Tbsp of hot oil to the batter. Give it a mix.

 

14. Check the temperature by dropping a tiny piece of mixture to the oil, it should rise immediately.

15. Take one half of the stuffed bread at a time, dip the it in the batter. Seal the edges and coat the batter all over the bread.

 

16. Drop excess batter and then put it in hot oil.

17. Deep fry on a medium flame and flip once it is cooked from one side.

18. Cook on both sides till golden brown.

19. Drain excess oil on kitchen towel.

20. Serve hot with dips of your choice.

Bread Pakodas makes for a great get-together or a party snack. This street food is served for breakfast as well all across India.

Serve it with hot tea along with mint coriander chutney and ketchup.

  • 1 Cup Besan (Gram Flour)
  • 1/4th Cup Rice Flour
  • Salt to taste
  • 1 Tsp Carom Seeds (Ajwain)

Stuffing-

  • 1 Tbsp Oil
  • 1 Tbsp Ginger, Garlic & Green Chilli (Finely Chopped)
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Red Chilli Powder
  • 1 Tbsp Crushed Coriander Seeds
  • 1 Tsp Amchur Powder
  • 1 Tsp Coriander Powder
  • Salt to taste
  • 4 Tbsp Coriander Leaves
  • 1 Cup Boiled & Mashed Potatoes
  • Bread Slices
  • Mint Coriander Chutney
  • Tomato Ketchup

Notes

• Make sure to regulate the temperature of oil.
• Add hot oil to the mixture before frying, it will add moisture to the pakoras.
