This recipe of kale chane ke kabab makes super soft, melt in mouth vegetarian kebabs. We also call it veg Galouti kebab for its texture.

It is super healthy, full of protein and tastes delicious. This veg kabab recipe makes for a great party starter or snack.

I like to include as many grains and pulses in my meals. Kale chane or black chickpeas is my personal favorite and I include it in my meals once a week, in different forms.

Kale chane ke kebab can also be served in wraps, tacos, healthy sizzlers, sandwiches, burgers and what not. Or just have it with the choice of your chutney or dip during tea time.

How to prepare for Veg Galouti Kabab –

Soak black chickpea overnight.
Set the curd, if using homemade.

 

How to make Kale Chane Ke Kebab –

In a mixer jar, add boiled kale chane, onion, breadcrumbs, curd, salt, chat masala, cumin powder, black salt and red chilli powder.

Grind till smooth. Transfer to a bowl, add coriander leaves and carom leaves. Mix everything well.

Grease palms and shape the mixture into kebabs. Cook on a hot tawa on both sides. Serve hot.

Things to keep in mind while making Veg Kabab Recipe –

1. Make sure the chickpeas are not too soggy or too dry, it should be boiled to perfection.
2. Cook kebab right after shaping them, else the onion will release the water, making it difficult to retain the shape.
3. Cook on an iron tawa or any heavy bottom tawa for best taste.
4. Let chane cooled down before grinding.
5. Open the pressure cooker only when steam is released by itself.

Step by Step Recipe of Kale Chane Ke Kebab –

 

Boil Kale Chane –

1. In a pressure cooker, add soaked chane, water and salt. Cook for about 4 -5 whistles or until done.

2. Open the pressure cooker only when steam is released by itself.

3. Strain excess water and let chane cooled down.

 

Tip –

Do not discard the water, use for making soups (it super healthy)

 

Preparing Kebabs –

1. When chickpea is cooled down, transfer to a mixer jar.

2. To it add sliced onion, breadcrumbs, curd, chaat masala, cumin powder, black salt, red chilli powder.

 

3. Grind to a fine and smooth mixture.

4. Transfer the mixture to a bowl.

5. To it add finely chopped coriander leaves and carom leaves (optional).

6. Grease your palms and shape the mixture into equal sized kebabs.

 

Cooking kebabs –

 

1. Heat iron tawa or any heavy bottom tawa.

2. Apply ghee. Place kebabs and cook both sides on a low flame till golden brown.

3. Serve hot with coriander mint chutney or dip of your choice.

 

How to serve Kale Chane Ke Kebab –

There are various ways to serve Kale Chane ke Kebab. Tuck them in the wraps, burgers, sandwiches or serve them as a starters or snacks during tea time with the dip of your choice.

Ingredients
  

  • 1/2 Cup Kale Chane (Black Chickpea)
  • 3 Cups Water (To boil)
  • 2 No. Roughly Chopped Onion (Small)
  • 1/2 Cup Breadcrumbs I have used bread corners
  • 1 Tsp Chaat Masala
  • 1 Tsp Red Chilli Powder
  • 1 Tsp Cumin Powder
  • Black Salt to taste
  • Salt to taste
  • 2 Tbsp Curd
  • 2 Tbsp Finely Chopped Coriander
  • 1 Tbsp Finely Chopped Carom leaves (Can also use carom seeds instead)
  • 1 Tsp Ghee

Instructions

Notes

Adjust the spices as per taste.
If the mixture doesn’t bind well, add a little bit of gram flour or rice flour.
After grinding make kebabs immediately.
